Iron is an essential part of various proteins and enzymes. Iron serves as the core hemoglobin molecule, the oxygen carrying component of red blood cell, and helps in prevention of anemia. The World Health Organization considers iron deficiency as the primary nutritional disorder in the world.
Iron deficiency in the body leads to a fall in the hemoglobin levels. Iron ensures good oxygen supply to the entire body. There are two main forms of dietary iron. One is haeme that is found in red meat, fish and poultry and non-haeme that is prevalent in lentils, beans, mushrooms and spinach.
